So Tonight I had a certain NEW recipe in mind that I wanted to prepare for dinner; however, by the time I was finished being tortured by the dentist and having a completely numb mouth and tongue.... picking Azure up from a friends (visiting for a moment of course) ....and fighting traffic to pick up Brett from work.... only then to come home having to cook dinner with a migraine.... SO I created something faster, cheaper and OH SO YUMMIER than I had originally intended.
"Pop" open a tube of refrigerated crescent roll dough, without jumping or flinching! Betcha can't do it! It's like trying to sneeze with your eyes open... IT JUST ISN'T POSSIBLE!
Roll open the dough and stretch each triangle out to make it a little bigger. Start with a dab of cream cheese, followed by the guacamole, black beans and chicken. Keep in mind that you will be rolling them into pockets so as not to overload them.
*After assembling them I thought of the idea to use 2 tubes of dough and keep them in triangle shapes and just make bigger pockets by laying another triangle on top of one with filling and pinch the seems shut. I'm always more brilliant after the fact!
Drizzle salsa over top the filling.
Roll them envelope style pinching closed any gaps.
Bake @ 350 degrees for 12-14 minutes! Easy! Serve with Spanish Rice and Corn.

INGREDIENTS:
1 tube of crescent roll dough
2-3 oz Cream Cheese
1/2 cup salsa
1/2 cup Guacamole (I didn't have guac, only an avocado. But guac would be perfect!)
1/2 cup black beans
* Shredded chicken would be great in these as well, but once again, I had a migraine...
